Grilled sausage with colourful mozzarella and tomato salad

Ingredients

Servings: 4
  • 750 g Tomato mix (or 500 g vine tomatoes and 250 g yellow cherry tomatoes)
  • 1 red onion
  • 2 TABLESPOONS light balsamic vinegar
  • 7-10 Tbsp salt, pepper, sweet paprika, ground coriander 3 tablespoons + possibly 2 tablespoons of oil
  • 1 (290 g) Bag of mini mozzarella balls
  • 8 Grilled sausages
  • 100 g Salad (e.g. arugula)
  • 1 TABLESPOON Walnut kernels

Directions

    Wash the tomatoes and cut them in half or quarters depending on size. Peel onion and cut into fine strips. Mix vinegar, salt and pepper, fold in 3 tablespoons of oil. Mix vinaigrette, tomatoes, onions and mozzarella balls.

    Fry the sausages on the hot grill (or possibly in a large pan in 2 tablespoons of hot oil) for approx. 8 minutes on all sides. In the meantime, clean, wash and drain the salad, if necessary pluck smaller. Chop the nuts.

    Mix with salt, pepper, 1 pinch of paprika and 1⁄2 TL coriander.

    Fold the salad into the tomato salad and serve with the sausages. Sprinkle with the nut and spice mixture. Flat bread tastes good with it - also briefly grilled if desired.
