Ingredients

  • 300 g Flour
  • 7-10 Tbsp Salt
  • 2 Egg Yolk
  • 7-10 Tbsp (size M)
  • 150 g Butter
  • 350 g Broccoli
  • 500 g tripped chop of Kasseler
  • 1 TABLESPOON Oil
  • 1 collar Parsley
  • 200 g Gouda cheese
  • 200 g Schmand
  • 250 g Low-fat curd
  • 4 Eggs (size M)
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp grated nutmeg
  • 2 TABLESPOONS Breadcrumbs
  • 7-10 Tbsp Grease

Directions

    Put flour, some salt, egg yolk, butter and 3 tablespoons of cold water into a mixing bowl and knead with the dough hooks of the hand mixer to a smooth dough. Cover and leave to rest in the fridge for 30 minutes. Meanwhile clean and wash the broccoli and cut off the florets. Cook broccoli in salted water for 3-4 minutes. Put it on a sieve and let it drain. Dice the smoked pork.

    Heat the oil in a pan and fry the smoked pork in portions. Drain on kitchen paper. Wash the parsley, dab dry and chop finely. Grate cheese finely. Mix sour cream, low-fat curd, eggs and parsley. Season with salt, pepper and nutmeg. Roll out the dough to a circle (approx. 30 cm Ø) on a lightly floured work surface. Line a greased springform pan (26 cm Ø) with the dough while pressing the rim up. Prick the dough base several times with a fork and sprinkle with breadcrumbs. Put broccoli and cured pork loin into the tin. Pour egg cream over it.

    Season with salt, pepper and nutmeg. Roll out the dough to a circle (approx. 30 cm Ø) on a lightly floured work surface. Line a greased springform pan (26 cm Ø) with the dough while pressing the rim up. Prick the dough base several times with a fork and sprinkle with breadcrumbs. Put broccoli and cured pork loin into the tin. Pour egg cream over it. Spread the cheese on top. Cook the cake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for about 40 minutes

    Take out and let it cool down for 5 minutes. Loosen the cake tin. Cut the quark cake into 12 pieces
