Ingredients

  • 1.25 kg Sour cherries
  • 100 ml Red wine vinegar
  • 300 g Sugar
  • 2 TEASPOONS 5-spice powder

Directions

    Cherries, washing, stalking, pitting. Weigh 1 kg. Preheat oven (electric cooker: 175 °C/circulating air: 150 °C/gas: see manufacturer).

    For the infusion bring vinegar, sugar, 200 ml water and 5-spice powder to the boil.

    In the meantime, put the cherries into clean glasses. Pour the hot infusion over them, leaving about 1.5 cm free towards the rim. Close the jar.

    Place glasses in a roasting pan and add hot water. Cook in the hot oven for about 1 hour. Take out glasses and let them cool down. Spicy cherries taste great with steak, poultry or cheese.
