Spelt cake with plums

Ingredients

  • 1 TEASPOON crunchy oats
  • 30 g Spelt flour ,
  • 7-10 Tbsp Buckwheat flour or dark
  • 7-10 Tbsp Wheat flour (Type 1050) 1 sachet baking powder
  • 1 egg, 1 pinch of salt (Gr. S)
  • 2 TEASPOONS Sugar
  • 4-6 Tbsp Mineral water
  • 4-5 (approx. 125 g) Plums
  • 1 TABLESPOON Lemon juice
  • 7-10 Tbsp some cinnamon, maybe 1 star anise
  • 1/2 TEASPOON Cornstarch
  • 1/2 TEASPOON Oil
  • 7-10 Tbsp Mint

Directions

    Roast the oat flakes in a coated pan without fat and remove. Mix flour, baking powder, egg, salt, 1 teaspoon sugar and mineral water until smooth. Let the dough swell for about 10 minutes

    Wash plums, cut in half, stone. Bring to the boil with 3-4 tbsp. water, 1 tsp. sugar, lemon juice, cinnamon and star aniseed. Simmer covered for about 5 minutes. Mix starch and 1 tablespoon of water until smooth. Stir into the compote, bring to the boil and cool down a little

    Heat the oil in a frying pan. Bake 2 small pancakes one after the other from the dough. Serve with plums and sprinkle with oat flakes. Decorate if necessary.
