Omelette with goat cheese and walnuts

The nice thing about omelette is that it is low carb - and can be filled in a variety of ways. For example with goat's cheese, walnuts and a few drops of sweet maple syrup.

Ingredients

Servings: 4
  • 2 red onions
  • 1⁄2 Federation Spring onions
  • 1 (200 g) Roll of soft goat cheese or Camembert
  • 8 Eggs (Gr. M)
  • 5 TABLESPOONS Whipped cream or milk
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 50 g Walnut kernels
  • 3 TSP Oil
  • 4-6 Tsp Maple syrup or fir honey

Directions

    Peel onions and cut them into rings. Clean and wash spring onions and cut into rings. Cut goat cheese into 8 slices. Whisk eggs and cream well, season with salt and pepper.

    Roast the walnuts in a coated pan (approx. 14 cm Ø) without fat and take them out. Heat 1 tsp. oil in it, fry onions and spring onions in it. Take them out.

    1⁄2 Heat a teaspoon of oil in a frying pan. 1⁄4 Cover the egg cream and let it set for about 5 minutes over a low heat. Remove. 1⁄4 Spread the onion mixture and 2 slices of goat's cheese on one half of an omelette, fold over and keep warm.

    Bake 3 more omelettes in the same way from the remaining ingredients. Serve with roasted nuts and syrup.
