Hearty Kaiserschmarrn with ham

Ingredients

  • 3 small onions
  • 1 (350 g) Stalk leek (leek)
  • 1 collar Thyme
  • 1/2 bunch Rosemary
  • 4 Eggs (size M)
  • 200 ml Milk
  • 100 ml Mineral water
  • 150 g Flour
  • 7-10 Tbsp Salt
  • 7-10 Tbsp black pepper
  • 7-10 Tbsp grated nutmeg
  • 3 TABLESPOONS Oil
  • 200 g diced smoked ham

Directions

    Onions peel and in rough pieces cut. Clean, wash and slice the leek. Wash the herbs, dab dry and put something aside for garnishing, chop the rest finely.

    Separate eggs. Mix egg yolk, milk, mineral water and flour to a smooth dough. Season with salt, pepper and nutmeg. Heat 1 tablespoon of oil in a frying pan, fry the onions, leek and ham for 3-4 minutes.

    Add the herbs, fry briefly and remove. Beat egg whites until stiff, fold into the prepared dough. Heat 1 tablespoon of oil in a frying pan. Add half of the dough, cover and fry over low heat for 5-6 minutes.

    Turn once. Tear the dough into pieces with 2 forks. Take out and process the remaining dough and oil in the same way. Put aside the sardines and leek mixture to the sardines in the pan. Fry for 2-3 minutes while turning.

    Season with pepper. Serve garnished with set aside herbs.
