Spaghetti carbonara

Ingredients

Servings: 4
  • 400 g Spaghetti
  • 7-10 Tbsp Salt
  • 150 g streaky smoked bacon
  • 1 Garlic clove
  • 1-2 TABLESPOONS Olive oil
  • 100 g Pecorino Romano (substitute for parmesan; piece)
  • 4 fresh eggs
  • 7-10 Tbsp Pepper

Directions

    Cook the spaghetti in plenty of boiling salted water for about 10 minutes until al dente.

    Cut the bacon into fine cubes. Peel garlic and cut in half lengthwise. Fry both in a pan in hot oil until crispy. Remove garlic.

    Grate cheese. Whisk eggs, salt and pepper in a large bowl. Stir in bacon and 2/3 cheese.

    Drain the spaghetti, let it drip off and immediately add to the egg mixture. Mix everything well and serve immediately. Sprinkle with pepper and remaining cheese.

    Drink: cool white wine, for example Frascati Superiore from Villa Simone.
