Ingredients

  • 2 Onions
  • 1 Garlic clove
  • 1 medium-sized carrot
  • 1 stalk of celery
  • 1 (approx. 100 g) small stick of leek (leek)
  • 50 g streaky smoked bacon
  • 3 Stem(s) Thyme, oregano and basil
  • 1-2 TABLESPOONS Olive oil
  • 400 g mixed minced meat
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp grated nutmeg
  • 2-3 TABLESPOONS Tomato paste
  • 1/2 TEASPOON clear instant broth
  • 1 Bay leaf
  • 1 Cloves
  • 1 can(s) (425 ml) Tomatoes
  • 400 g Spaghetti
  • 40 g Parmesan cheese (piece)

Directions

    Peel and finely dice the onions and garlic. Peel the carrots. Clean the celery and leek. Wash the vegetables. Dice bacon and vegetables very finely. Wash herbs.

    Pluck thyme leaves. Heat oil in a large pan. Fry the minced meat for about 5 minutes, crumble it with a spatula. Fry bacon, onions, garlic and vegetables briefly. Season with salt and pepper. Stir in tomato paste, sweat briefly. Add 1/8 litre water, stock, bay leaf, clove, thyme and tomatoes in the juice. Bring everything to the boil, stirring from time to time. Bring plenty of salted water to the boil in a large pot. Add the pasta and cook for 9-10 minutes until al dente. Stir from time to time. Pluck oregano and basil leaves and chop finely, except for a little basil for garnishing.

Stir into the bolognese sauce. Season to taste with salt, pepper and nutmeg. Grate the Parmesan finely. Drain the spaghetti. Mix with the sauce in a large bowl and arrange on plates. Garnish with basil and serve with Parmesan
