Sour cream waffles with cherry compote

Ingredients

  • 1 glass (720 ml) Cherries
  • 1 Vanilla pod
  • 1 TABLESPOON + 50 g sugar
  • 1 heaped tablespoon of cornflour
  • 125 g Butter or margarine
  • 1 package Vanillin sugar
  • 1 pinch Salt
  • 3 Eggs (size M)
  • 250 g Flour
  • 1/2 package Baking Powder
  • 300 g ripened cream
  • 4 TABLESPOONS Icing sugar
  • 7-10 Tbsp Mint
  • 7-10 Tbsp Grease

Directions

    Pour the cherries into a sieve, drain well and collect the juice. Carve the vanilla pod lengthwise, scrape out the pulp. Place the vanilla pod and pulp in a pot with the collected juice and 1 tablespoon of sugar, bring to the boil. Mix the starch with a little water until smooth. Remove from heat, stir in the starch.

    Let simmer for about 1 minute while stirring. Mix in the cherries, pour everything into a bowl and let it cool down. For the waffle dough, mix fat, 50 g sugar, vanillin sugar and salt with the whisks of the hand mixer until creamy. Stir in the eggs one after the other. Mix flour and baking powder, alternately stir in sour cream. Put about 1 1/2 tablespoons of dough in the middle of a greased preheated waffle iron and bake until golden brown. Bake about 8 waffles in total. Decorate the waffles with mint and dust with icing sugar. Serve with cherries.
