Ingredients

  • 1.2 kg Apples (e.g. Elstar)
  • 5-6 Tbsp Lemon juice
  • 600 g Flour
  • 450 g Sugar
  • Two pck. Vanilla sugar
  • 2 TEASPOONS ground cinnamon
  • 7-10 Tbsp Salt
  • 200 g Butter
  • 100 g Coconut oil
  • 250 ml Buttermilk
  • 1 pck. Baking Powder
  • 4 Eggs (Gr. M)
  • 7-10 Tbsp Fat and flour
  • 150 g Icing sugar
  • 2-3 TABLESPOONS Milk

Directions

    Peel and core apples and cut them into very fine pieces or cubes. Mix with lemon juice and put aside covered.

    For the dough mix flour, sugar, vanilla sugar, cinnamon and 1 pinch of salt in a large mixing bowl. Bring butter and coconut oil to the boil briefly. Pour hot fat into the flour mixture and mix briefly with the whisk of the mixer (dough is relatively firm), adding the buttermilk. Then add the baking powder and eggs one by one. Finally fold in the apple cubes.

    Spread the dough on a greased and flour-strewn frying pan. Bake in a preheated oven (electric cooker: 200 °C/circulating air: 180 °C/gas: see manufacturer) for approx. 35 minutes (test with sticks!). Leave to rest in the switched off oven for approx. 5 minutes. Let the cake cool down on a cake rack for about 10 minutes.

    For the icing, mix icing sugar and milk to a smooth, thick icing. Coat the hot cake with the icing and let it cool down. Schmand tastes good with it.
