Clean and wash the chicory and lamb's lettuce and drain well. Remove 8 leaves from the chicory and set aside for garnishing. Halve the remaining chicory and cut into strips.
Roughly pluck lamb's lettuce, except for a little to garnish. Drain mandarins on a sieve and collect the juice. Peel and finely dice or chop the onion. Mix mayonnaise, sour cream, onions, curry and about 5 tablespoons of mandarin juice.
Season to taste with salt and possibly pepper. Drain the shrimps. Mix curry sauce, shrimps, mandarins, lamb's lettuce and chicory strips. Divide the chicory leaves into 4 glasses and arrange the shrimp cocktail in them.
Garnish with remaining lamb's lettuce and serve sprinkled with cress.
