Wash the tomatoes, cut them into slices and place them on a plate. Wash the meat, dab dry and cut into strips. Clean and wash spring onions and cut them into rings. Fry both in hot oil while turning.
Season with salt and pepper and spread on the tomatoes. Bring the drippings, 2 tablespoons of water and vinegar to the boil. Wash, chop and add the basil. Spread on the tomatoes. Serve garnished with lemon and basil.
