Mix flour, milk, egg and salt to a dough and let it swell. Stir curd and mineral water until smooth and season with lemon juice and sweetener. Wash, drain and clean the strawberries.
Cut half into cubes and fold into the quark. Heat oil in a pan, add pancake batter and bake at medium heat from both sides until golden brown. In the meantime cut the remaining strawberries into slices.
Peel and slice the kiwi. Arrange pancakes, curd cheese and fruits on a plate. Garnish with lemon balm and serve dusted with caster sugar.
