Shell noodle salad with kohlrabi, carrots and coppa ham

Ingredients

Servings: 4
  • 300 g large mussel noodles
  • 7-10 Tbsp Salt
  • 350 g Kohlrabi
  • 3 Carrots
  • 1 (approx. 300 g) Lettuce
  • 12 discs air-dried, Italian ham (approx. 8 g each)
  • 4 TABLESPOONS Red wine vinegar
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 4 TABLESPOONS Olive oil
  • 2 Shallots
  • 7-10 Tbsp Oil

Directions

    Cook the pasta in boiling salted water according to the instructions on the packet. Peel, halve and thinly slice the kohlrabi. Peel carrots and cut them diagonally into thin slices. Clean and wash the salad and pluck into bite-sized pieces.

    Brush a pan with a little oil. Leave the ham in it for 2-3 minutes until crispy, take it out. Remove the noodles and rinse with cold water. For the vinaigrette season vinegar with salt, pepper and sugar.

    Add oil drop by drop. Peel shallots, cut into fine cubes and stir into the vinaigrette. Mix salad, carrots, ham, kohlrabi and vinaigrette in a bowl. Season with salt, pepper and sugar and arrange on plates.
