Asparagus and potato salad with sesame and chilli marinade

Ingredients

Servings: 4
  • 600 g Potatoes
  • 250 g white asparagus
  • 250 g green asparagus
  • 1 Spring onion
  • 2 TABLESPOONS Sunflower oil
  • 2 TABLESPOONS Sesame seed
  • 4 TABLESPOONS Chilli sauce for chicken
  • 4 TABLESPOONS light balsamic vinegar
  • 7-10 Tbsp Salt
  • 100 ml Vegetable broth

Directions

    Wash the potatoes and cook in plenty of boiling water for about 20 minutes. Rinse under cold water, drain, peel and slice. Wash the asparagus. Peel white asparagus. Cut the woody ends off the green and white asparagus. Cut the asparagus very diagonally into thin slices.

    Clean and wash spring onion and cut into thin strips. Heat the oil in a pan and fry the asparagus for about 8 minutes while turning. Add sesame, chilli sauce and vinegar, season with salt. Mix potatoes, stock and asparagus and let it stand for about 30 minutes. Arrange salad with strips of spring onions on plates
