Pasta salad with green beans and spinach

Ingredients

Servings: 4
  • 800 g green beans
  • 7-10 Tbsp Salt
  • 300 g young leaf spinach
  • 1 Organic Lemon
  • 500 g Mezzi Rigatoni pasta
  • 100 g Parmesan cheese
  • 2 TABLESPOONS Olive oil
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp freshly grated nutmeg

Directions

    Wash and clean the beans and cut them into pieces of about 4 cm. Cook in boiling salted water for about 8 minutes. Sort the spinach, wash and shake dry. Wash lemon hot, grate dry, grate peel thinly.

    Halve the lemon and squeeze the juice.

    Cook the pasta in boiling salted water according to the instructions on the packet. Grate the parmesan. Drain the beans, rinse briefly with cold water, drain. Mix the beans, spinach, lemon peel, oil and cheese, except for something to sprinkle.

    Season to taste with salt, pepper, nutmeg and lemon juice.

    Drain the pasta, put back into the pot, fold in the vegetable mixture and arrange on plates.
