Ingredients

  • 250 g dried soybeans
  • 1 medium onion
  • 1 Garlic clove
  • 1 Egg
  • 3-4 Tbsp Flour
  • 3-4 Tbsp Breadcrumbs
  • 7-10 Tbsp salt and pepper
  • 7-10 Tbsp Cumin
  • 1 collar Spring onions
  • 7-10 Tbsp Juice of 1 lemon
  • 7-10 Tbsp Sugar
  • 10-12 TABLESPOONS Oil (e.g. soybean oil)
  • 1 red and yellow pepper
  • 200 g mixed leaf salad (e.g. Lollo bionda, Lollo rosso
  • 7-10 Tbsp or arugula)
  • 1/2 bunch/pot of basil
  • 10 TABLESPOONS Sesame

Directions

    Soak the soybeans in approx. 1 l cold water for approx. 12 hours. Drain the next day, bring to the boil with about 1 l of fresh water, cover and simmer over a low heat for about 1 hour. Drain and let it cool down a bit.

    Peel and coarsely chop the onion and garlic. Puree soybeans, onion, garlic and approx. 100 ml water. Stir egg, flour and breadcrumbs into the mixture. Season vigorously with salt, pepper and cumin.

    Clean and wash spring onions and cut into fine rings. Stir into the beans. Chill for about 1 hour.

    Mix lemon juice, salt, pepper and 1 pinch of sugar. Fold in 4 tablespoons of oil. Clean, wash and cut the peppers into strips. Clean, wash and shake the salad dry and pluck into bite-sized pieces.

    Wash the basil, remove the leaves. Mix the salad ingredients and marinade carefully.

    Shape 16-20 small thalers from the soya mass with moistened hands, turn in sesame. Heat 6-8 tablespoons of oil in portions in a coated pan. Fry the thalers for 4-5 minutes on each side, keeping the finished thalers warm.

    Season salad again and arrange everything. Basil yoghurt goes well with it.
