Sesame chicken skewers on spicy mango salsa

Ingredients

  • 2 small onions
  • 1 walnut-sized piece of fresh ginger
  • 7-10 Tbsp 1⁄2 -1 small red chilli pepper
  • 2 (approx. 1 kg) ripe mangoes
  • 2 Organic limes
  • 2-3 stem(s) Coriander or parsley
  • 75 g sprouts (e.g. radish or alfalfa sprouts)
  • 3 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Sugar
  • 400 g Chicken filet
  • 5-6 Tbsp Sesame
  • 8–12 wooden skewers

Directions

    Peel and finely dice the onions and ginger. Clean the chilli, cut lengthwise, remove seeds, wash and chop finely. Peel mangos, cut the flesh from the stone and dice finely. Wash limes hot, dry and finely grate the peel.

    Squeeze 1 lime. Wash the coriander, shake dry. Put something aside for garnishing, pluck the leaves from the rest and chop them coarsely. Sort the sprouts, wash and drain.

    Mix onions, ginger, chilli, mangoes, lime zest and juice, coriander, sprouts and 1 tbsp. oil. Season to taste with salt and a little sugar. Let salsa steep a little.

    Wash the chicken filet, dab dry and cut lengthwise into 8-12 strips. Season with salt, stick on skewers and roll in sesame seeds.

    Heat 2 tablespoons of oil in a coated frying pan. Fry the skewers in it in portions all around for about 5 minutes until crispy. Season salsa to taste if necessary and arrange with the skewers. Garnish with the remaining coriander.
