Turkey mince roast with strawberry salsa

  • 1 Bread roll (from the previous day)
  • 1 kg Organic turkey breast
  • 3 Onions
  • 1 collar flat leaf parsley
  • 200 g Feta
  • 1 Egg
  • 7-10 Tbsp salt, pepper
  • 7-10 Tbsp Sugar
  • 500 g ripe strawberries
  • 6 Stem(s) Thyme
  • 3 TABLESPOONS White wine vinegar
  • 3 TABLESPOONS Oil
  • baking paper

Directions

    For the meat loaf, soak the rolls in cold water. Wash the turkey breast, dab dry and dice finely first, then chop very finely with a large knife. Peel and finely dice the onions.

    Wash parsley, shake dry and chop finely. Finely dice the feta.

    Preheat oven (electric cooker: 175 °C/circulating air: 150 °C/gas: see manufacturer). Minced turkey, squeezed bread roll, 1⁄3 the onion cubes, egg, parsley, 1 1⁄2 tsp salt and 1 tsp pepper well knead. Knead in diced feta.

    Form 1 loaf from the mass. Line a baking tray with baking paper and place the loaf on top. Bake in a hot oven for about 1 hour.

    In the meantime, wash and clean the strawberries for the salsa. Finely dice half the strawberries. Purée the rest with a hand blender. Wash the thyme and remove the leaves. Mix strawberry puree and diced strawberries, rest onion dices, thyme, vinegar and oil.

    Season with salt, pepper and 1 pinch of sugar. Serve the roast turkey with the strawberry salsa.
