Scampi with strawberry sauce

  • 16 piece(s) Scampi
  • 1 piece(s) Orange and Zesten
  • 100 g Strawberries
  • 2 TABLESPOONS Maple syrup
  • 1 piece(s) Charlotte
  • 3 piece(s) Piquillos
  • 1 TABLESPOON Olive oil
  • 1 collar Coriander

    Finely chop the piquillos, Charlotte and coriander. Wash the strawberries (preferably from Europe), remove the middle part and cut into small cubes. Heat olive oil in a pot, add maple syrup with orange juice and mix. Remove the pot from the heat and, when lukewarm, add the strawberries and coriander. Season the scampi with salt and pepper, place them on a skewer and fry or grill them in olive oil. Put the strawberry sauce on the plate and arrange the scampi skewer on top. Garnish with fresh coriander and sprinkle with lemon juice.
