Scampi in fine tomato sauce

Ingredients

Servings: 2
  • 6 King prawns in the shell (approx. 30 g each)
  • 4 medium-sized tomatoes
  • 1 medium onion
  • 2 Garlic cloves
  • 4 TABLESPOONS Olive oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • some stem(s) Basil
  • 7-10 Tbsp Lemon

Directions

    Break the shrimps out of their shells, make a longitudinal incision in the back and remove the black intestine. Wash the prawns and pat them dry. Remove the stalk from the tomatoes. Scratch the top of the tomatoes crosswise.

    Briefly blanch with boiling water. Peel off skin. Cut tomatoes into quarters, remove seeds and dice. Peel and finely dice onion and garlic. Heat 2 tablespoons of oil. Sauté onion and garlic.

    Add the tomatoes, warm briefly. Heat the remaining oil and fry the scampi for about 2 minutes on each side. Cut basil leaves into strips and add to the tomatoes. Season sauce and scampi with salt and pepper.

    Serve the scampi with the tomato sauce. Garnish with lemon and basil.
