Salmon on Savoy cabbage

Ingredients

Servings: 2
  • 4 pieces of salmon (approx. 100 g each)
  • 1 Garlic clove
  • 500 g Savoy cabbage
  • 1 Onion
  • 3 TABLESPOONS Butter or margarine
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1-2 TABLESPOONS Lime juice
  • 1 TABLESPOON Flour
  • 100 g Whipped cream
  • 7-10 Tbsp Cayenne pepper
  • 7-10 Tbsp Lemon and lime

Directions

    Wash the salmon and dab dry. Peel garlic and press it through a garlic press. Clean and wash the savoy cabbage and cut into fine strips. Peel onion and chop finely. Fry the onion and savoy cabbage in 1 tablespoon of fat for about 5 minutes, season with salt and pepper.

    Deglaze with 1/4 litre water and boil for about 10 minutes. Drain and collect the stock. In the meantime, fry the garlic in 1 tablespoon of hot fat. Fry the salmon for about 8 minutes while turning.

    Season with salt and a few splashes of lime juice, remove and keep warm. Melt the remaining fat in it. Sweat flour in it. Add cream and savoy cabbage stock while stirring constantly and bring to the boil.

    Season to taste with salt, cayenne pepper and lime juice. Arrange fish and savoy cabbage with some sauce on a plate. Serve garnished with lemons and limes as desired. Remaining sauce extra is enough.
