Salmon fillet with almond broccoli

Ingredients

Servings: 4
  • 1 pack of (2 pieces = 400 g) Baked potatoes with sour cream
  • 2 TABLESPOONS Oil
  • 500 g Broccoli
  • 7-10 Tbsp Salt
  • 4 Salmon fillets with skin (approx. 200 g each)
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS flaked almonds
  • 1 TABLESPOON Butter
  • 7-10 Tbsp Parsley

Directions

    Cut the baked potatoes in half. Heat 1 tablespoon of oil in a grill pan. Fry the potato halves for 2-3 minutes. Place potatoes on the fat pan of the oven with the cut surface facing upwards. Bake in a preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: see manufacturer) for 10-15 minutes

    Meanwhile cut broccoli into florets, wash and cook in boiling salted water for about 5 minutes. Wash the salmon fillets and dab them dry. Put 1 tablespoon of oil into the grill pan and fry the salmon fillets in it from the skin side for 4-5 minutes. Season with salt and pepper. Turn and let simmer for about 3 minutes at low heat

    Roast the flaked almonds in a pan without oil until golden brown, add butter and melt. Drain broccoli and add to the almond butter

    Arrange salmon on plates together with baked potatoes and broccoli. Serve with sour cream. Garnish with parsley if desired.
