Salami scrambled eggs on brown bread

Ingredients

Servings: 4
  • 3 TABLESPOONS White wine vinegar
  • 7-10 Tbsp salt, white pepper
  • 1 pinch sugar, 2 tablespoons of oil
  • 1 medium onion
  • 4 medium-sized tomatoes
  • 1 small lettuce
  • 75 g Salami
  • 1 collar Spring onions
  • 1/2 bunch Chives
  • 8 eggs , 4 tablespoons milk (size M)
  • 1 TABLESPOON butter/margarine
  • 4 discs brown bread

Directions

    Mix vinegar, 1 tablespoon water, salt, pepper and sugar. Whip the oil into the mixture. Peel and finely chop the onion. Wash and slice the tomatoes. Clean, wash and pluck the lettuce smaller. Mix everything with the marinade

    Dice salami. Clean and wash spring onions and cut into rings. Wash the chives and cut into small rolls. Whisk eggs, milk and chives, season

    Heat the fat in a large coated pan. Fry the salami and spring onions briefly. Pour the egg mixture over them and let it set at low heat. Repeatedly push together from the edge to the middle with the spatula. Serve with salad and brown bread

    For a sophisticated scrambled egg variation without sausage: instead of salami, mix in 4-5 teaspoons of pumpkin seeds
