Salad with gratinated goat cheese

Ingredients

  • 8 small, round goat cheese (approx. 160 g)
  • 6 TABLESPOONS Olive oil
  • 7-10 Tbsp coarsely ground coloured pepper
  • 3 discs Toast
  • 20 g Butter or margarine
  • 200 g Rocket
  • 200 g mixed salad (e.g. oak leaf, lollo bianco and lollo rosso)
  • 3 TABLESPOONS Sherry Vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper

    Place the goat's cheese in an ovenproof dish, drizzle with 2 tablespoons of oil and sprinkle with coloured pepper. Bake in the preheated oven (electric cooker: 225 ° C/ gas: level 4) for 10-15 minutes. Debark the toast and cut into cubes. Fry in hot fat until crispy.

    Clean and wash the rocket and salad and cut into bite-sized pieces. Mix vinegar, salt and pepper, add remaining oil. Arrange rocket, salad and goat cheese on four plates. Sprinkle with the toast cubes
