Ingredients

  • 1 kg waxy potatoes
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 40 g Butter
  • 2 TABLESPOONS Milk
  • 1 TABLESPOON Oil

Directions

    Wash the potatoes and boil them for 15 minutes, or take the jacket potatoes from the day before. Drain, let cool briefly and peel. Roughly grate the potatoes. Season with salt and pepper. Melt 30 g butter and mix with milk.

    Heat 10 g butter and oil in a large frying pan (26 cm Ø). Add the grated potatoes and cover with a lid. After 2 minutes, sprinkle a little milk-butter mixture over the potatoes and squeeze a little all around with a spatula.

    Turn the Rösti after another 2 minutes. Drizzle with some butter-milk mixture and turn and drizzle at 2 minute intervals until the Rösti is golden brown all round.
