Rocket-lemon spaghetti with chili oil

Ingredients

  • 7-10 Tbsp salt, pepper, sugar
  • 150 g Arugula
  • 1 Organic Lemon
  • 400 g Noodles (e.g. spaghetti)
  • 1 red chilli pepper
  • 3 Garlic cloves
  • 8 TABLESPOONS good olive oil

Directions

    For the noodles, boil 3-4 l salted water (1 teaspoon salt per litre). Select the rocket, wash and drain well. Wash the lemon hot, dry and grate the peel thinly. Halve the lemon, squeeze one half.

    Add pasta to boiling salted water and cook according to package instructions.

    Clean the chilli, cut lengthwise, remove seeds, wash and finely chop. Peel garlic and chop finely. Heat the oil in a large frying pan and fry the chilli and garlic over a low to medium heat for about 5 minutes.

    Drain the noodles and collect approx. 8 tbsp. of noodle water. Add noodles and noodle water to the chili oil and mix. Fold in rocket. Season to taste with salt, pepper, 1 tsp. sugar, lemon peel and 1-2 tbsp. lemon juice.
