Roasted asparagus from the wok

Ingredients

Servings: 3
  • 9-12 raw peeled shrimps (about 20 g each
  • 7-10 Tbsp fresh or frozen)
  • 1.5 kg white asparagus
  • 1 collar Spring onions
  • 1/2-1 small chili pepper or some Sambal Oelek
  • 2-3 TABLESPOONS Oil
  • 1 TABLESPOON Sesame
  • 7-10 Tbsp Salt
  • 7-10 Tbsp a few squirts of lime or lemon juice
  • 2-3 TABLESPOONS Soy sauce
  • 7-10 Tbsp lime, mint and chilli peppers to
  • 7-10 Tbsp Garnish

Directions

    1.defrost frozen shrimps. Rinse shrimps and pat dry. If necessary, cut into the back and remove the black gut

    Wash and peel the asparagus and cut off the woody ends. Cut asparagus into diagonal pieces. Clean and wash spring onions and cut into fine rings. Carve chilli lengthwise, remove seeds, wash and cut finely

    Heat the oil in a wok or large frying pan. Fry the asparagus for 5-6 minutes while turning

    Add the prawns, sesame and chilli and fry briefly. Season with salt and lime juice. Add spring onions and fry for another 2 minutes. Season everything with soy sauce and salt if necessary, garnish. Rice (e.g. basmati) is delicious with it.

    Stir-frying in the wok is also a great way to prepare asparagus. It is only cooked briefly until firm to the bite, its vitamins are optimally preserved
