First, I marinate the meat. For this I remove the outer leaves from the lemon grass and chop the inside finely. Peel the garlic and press 1 clove into the lemongrass. Mix both with 2 tablespoons fish sauce and pepper. Now I dab the meat dry, first cut it into finger-thick slices, then into fine strips. Afterwards mix it with the marinade and let it soak for at least 1/2 hour - but it doesn't hurt to let it soak longer.
In the meantime I pour hot water over the noodles and let them soak for about 5 minutes. Then rinse cold, drain and let it cool down
Clean the chillies, cut them lengthwise, remove the seeds and wash them. Then chop very finely and mix with the remaining fish sauce, vinegar, lime juice and 1-2 tbsp. sugar. Now add the rest of the garlic, the dip is ready to eat
Then I wash and sort the seedlings, let them drain well. Peel the cucumber, cut it in half lengthwise and remove the seeds. First cut into pieces of about 10 cm length, then into fine strips. Wash the herbs, dab dry and remove the leaves. Wash the salad, spin dry and cut into thin strips. Then spread on a plate or in a wide bowl. Mix cucumbers, sprouts and herbs and put everything on the salad. Put the noodles on top
Coarsely chop the peanuts. Clean, wash and cut the spring onions into rings. Heat oil in portions in a wok or a large pan and fry the meat over a high heat. Remove and fry the spring onions briefly in the frying fat. Mix in the meat again. Spread hot on the noodles and sprinkle with peanuts
