Ribbon noodles with smoked salmon in lemon caper sauce

Ingredients

  • 400 g ribbon noodles
  • 7-10 Tbsp Salt
  • 200 g Rocket
  • 1 medium onion
  • 1 TABLESPOON Oil (e.g. olive oil)
  • 100 ml White wine
  • 7-10 Tbsp juice of 1/2 lemon
  • 150 g Fresh cream
  • 1 TABLESPOON sauce thickener
  • 7-10 Tbsp Cayenne pepper
  • 1 TABLESPOON small capers
  • 4 discs Smoked salmon (about 30 g each)

Directions

    Cook the pasta in boiling salted water for about 10 minutes. In the meantime, clean and wash the rocket, pluck it into bite-sized pieces and let it drain. Peel and finely chop the onion. Heat the oil in a pan, sauté the onion in it and deglaze with white wine. Add lemon juice and crème fraîche. Bring to the boil, stir in the sauce thickener, season with salt and cayenne pepper.

    Add capers and rocket except for something to garnish. Pluck the smoked salmon into small pieces. Drain the noodles. Mix salmon and sauce with the noodles and arrange on plates. Garnish with the remaining rocket
