  • 150 g Whole milk yoghurt
  • 250 g Low-fat curd
  • 1 package Vanillin sugar

Directions

  1. 1

Drain the plums and collect the juice. Measure 250 ml of juice. Wash the orange with hot water and dab dry. Finely grate the peel. Squeeze the orange. Put 100 g sugar in a hot pot and let it caramelize golden.

Deglaze with 2/3 of the red wine, plum and orange juice, add star anise, cloves and cinnamon and simmer for about 10 minutes. Mix the pudding powder with the rest of the red wine until smooth and thicken the stock with it. Let the red wine compote cool down while stirring occasionally and remove the spices. Fold in plums. In the meantime, stir yoghurt, quark, rest of sugar, vanillin sugar and orange zest until smooth. Fill the yoghurt cream and red wine plums in layers into glasses and decorate as desired with pastry and lemon balm
