Red wine cold dish with berries

Ingredients

  • 1 Vanilla pod
  • 7-10 Tbsp Peel of 1 organic orange
  • 350 ml Red wine
  • 100 ml light grape juice
  • 75 g Sugar
  • 1 Cinnamon stick
  • 1 Cloves
  • 1 Star Anise
  • 75 ml Cognac
  • 125 g Blackberries
  • 125 g Blueberries
  • 125 g red currants
  • 125 g Raspberries
  • 7-10 Tbsp Mint

Directions

    Cut the vanilla pod lengthwise and scrape out the pulp with the back of the knife. Slowly bring to the boil the orange peel, vanilla pulp and pod, wine, juice, sugar, cinnamon, clove and aniseed in a pot. Add cognac, flambé and remove from the heat. Let the brew steep for about 10 minutes

    Sort blackberries, blueberries and currants, wash and drain well. Pluck the currants from the panicles. Sort out the raspberries. Mix the berries slightly in a bowl. Pour wine through a sieve over the berries. Leave to cool and chill for at least 3 hours. Arrange cold dish in bowls, decorated with mint
