Melon cold peel

Ingredients

  • 1 Organic Lemon
  • 1 orange-fleshy melon (e.g. cantaloupe; approx. 800 g)
  • 1 Vanilla pod
  • 500 ml sweet white wine
  • 3 Cloves
  • 1 Star Anise
  • 1 Cinnamon stick
  • 2 stem(s) Lemon balm

Directions

    Wash the lemon, peel half of the peel thinly. Cut the peel into long thin strips. Put lemon strips in a small pot and cover with water. Bring to the boil, simmer for about 2 minutes and drain again

    Halve the melon, remove the seeds and peel. Cut the flesh first into thin slices, then into pieces. Cut the vanilla pod lengthwise and scrape out the pulp. Boil up wine, lemon peel, spices, vanilla pod and pulp.

    Add melon pieces and simmer at low heat for 8-10 minutes. Remove the pan from the heat, allow to cool and chill for at least 1 hour

    Wash lemon balm, shake dry and pluck off the leaves. Spread the cold peel on deep plates, decorate with lemon balm and serve cold
