Red cabbage salad

Ingredients

Servings: 4
  • 1/2 Red cabbage (approx. 500 g)
  • 75 g streaky smoked bacon
  • 1/2 bunch Spring onions
  • 200 g Leberkäse in one piece
  • 1 Onion
  • 100 ml Vegetable broth (instant)
  • 100 ml White wine vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 1 pinch Sugar
  • 6 TABLESPOONS Oil
  • 7-10 Tbsp Parsley

Directions

    Clean the red cabbage, wash it, cut out the stalk. Slice the cabbage finely with a plane or cut into fine strips. Cut bacon into small cubes. Clean, wash and slice spring onions.

    Cut Leberkäse into thin strips. Peel onion and cut into rings. Skip the bacon until golden brown. Remove the bacon cubes. Fry onion rings in bacon fat and deglaze with broth and vinegar.

    Heat and season to taste with salt, pepper and sugar. Whip the oil into it. Mix red cabbage, bacon, spring onions and meat loaf. Pour hot vinaigrette over it and let it soak for about 30 minutes.

    Garnish with parsley.
