Radish potato salad with sausages

Ingredients

  • 1 kg small waxy potatoes
  • 1 Onion
  • 2 TABLESPOONS Honey
  • 4 TABLESPOONS Fruit vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 5 TABLESPOONS Oil
  • 1 collar Radishes
  • 100 g frozen peas
  • 12 Nuremberger bratwursts
  • 1 collar Spring onions
  • 12 discs Bacon
  • 7-10 Tbsp Radish sprouts

Directions

    Wash the potatoes and boil in water for about 20 minutes. Peel onion and cut into fine cubes. For the vinaigrette mix honey, vinegar, salt and pepper. Fold in 3 tablespoons of oil. Clean and wash the radishes and slice them thinly.

    Cook peas in boiling salted water for about 2 minutes and drain. Heat 2 tablespoons of oil in a pan. Fry the sausages in it all around for about 6 minutes, take them out. Put the pan aside. Drain potatoes, rinse with cold water, peel and slice. Carefully fold vinaigrette, sliced radishes and peas into the potatoes. Let the salad steep for about 30 minutes. Wash, clean and halve the spring onions and cut them into pieces of about 10 cm length. Wrap each a fried sausage and 1 piece of spring onion with a slice of bacon into packages. Heat the frying fat in the pan again.
