Goulash in Rösti

Ingredients

  • 5 Onions
  • 1 red pepper
  • 9 TABLESPOONS Oil
  • 1 kg Beef goulash
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS Tomato paste
  • 2 TABLESPOONS Flour
  • 500 ml dry red wine
  • 7-10 Tbsp Sugar
  • 5 Stem(s) Parsley
  • 300 g Celeriac
  • 4 Carrots
  • 50 g Walnut kernel halves
  • 1 TABLESPOON mayonnaise
  • 3-4 Tbsp Whipped cream
  • 500 g vacuum-packed, pre-cooked beetroot
  • 1 TABLESPOON Wine vinegar
  • 1 can(s) (314 ml) Sauerkraut
  • 1 Apples
  • 2 Gherkins
  • 1/2 bunch Chives
  • 800 g mainly waxy potatoes
  • 1 egg (size M)
  • 1 TABLESPOON Cornstarch
  • several sheets Lettuce to serve

Directions

    Peel and halve 4 onions and cut into strips. Wash, clean and cut the peppers into pieces. Heat 3 tablespoons of oil in a frying pan, fry the meat in it in portions, season with salt and pepper and remove. Sauté onions and peppers in the frying fat. Add tomato paste and flour, sweat briefly. Add meat again, deglaze with wine and 250 ml water. Season with salt, pepper and sugar. Cover and simmer for about 2 hours. Stir from time to time, season with salt and pepper

    Peel, wash and finely grate celery and carrots. Finely chop the walnuts. Mix celery, half carrots, walnuts, mayonnaise and whipped cream, season with salt and pepper. Grate beetroot finely. Mix with 1 tbsp. oil and vinegar, season with salt, pepper and sugar. Mix sauerkraut and remaining carrots. Wash apple, dab dry, grate finely from core. Grate gherkins finely. Mix apple, gherkins and 1 tbsp. oil with sauerkraut mixture, season with salt, pepper and sugar. Wash chives, shake dry and cut into small rolls. Sprinkle some chives over each salad

    Peel, wash and roughly grate the potatoes. Peel 1 onion and grate it with the potatoes. Stir in egg and starch and season with salt and pepper. Heat 4 tablespoons of oil in portions over medium heat in a frying pan. Fry about 8 Rösti out of the potato mixture in portions. Remove the Rösti, cut in half if necessary, arrange on plates with goulash, 3 kinds of salad and lettuce leaves.
