Ingredients

  • 1 Stalk parsley
  • 2 stem(s) Chives
  • 4-5 Tbsp Vegetable broth
  • 2 TABLESPOONS Orange juice
  • 1 TEASPOON Cider vinegar
  • 1/4 TEASPOON medium hot mustard
  • 7-10 Tbsp Salt
  • 7-10 Tbsp black pepper
  • 7-10 Tbsp Sugar
  • 1 TEASPOON Rapeseed and olive oil
  • 1 Mini romaine lettuce heart
  • 30 g Rocket
  • 4 cherry tomatoes
  • 1 Carrot
  • 1/2 small fennel bulb

Directions

    Wash parsley and chives and dab dry. Cut the chives into fine rolls. Pluck off the parsley leaves and chop finely. Mix stock, juice, vinegar and mustard. Season with salt, pepper and sugar. Drop the oil into the sauce. Mix in the herbs.

    Clean and wash salads. Cut romaine lettuce into pieces. Wash and halve tomatoes. Peel and wash carrots and cut into sticks. Clean fennel and cut into fine strips. Arrange salad and vegetables on a plate. Add dressing

    From the carbohydrate combination (approx. 100 kcal. each), either 30 g cooked wholemeal pasta or 2 slices of crispbread are allowed. From the protein combination 100 g fried chicken or turkey filet and extra 1 tsp. nuts (or seeds) or raspberries
