Rinse quinoa with hot water and cook in boiling salted water for 15-20 minutes. Peel the shrimps, except for the tail fin, and remove the intestines. Wash the prawns and pat them dry. Wash tomatoes and cucumber. Dice the tomatoes, cut the cucumber in half lengthwise and cut into thin slices
Drain the quinoa and let it drain. Mix quinoa, tomatoes and cucumber and marinate with lemon juice, vinegar, cumin, salt, pepper and 4 tablespoons of oil. Peel and slice the garlic. Heat 2 tablespoons of oil in a frying pan and fry the prawns for about 4 minutes while turning. After about 3 minutes add garlic. Season with salt and pepper. Arrange quinoa salad and shrimps and garnish with parsley
