Ingredients

  • 175 g Flour
  • 7-10 Tbsp Salt
  • 200 g Butter
  • 100 g Breakfast bacon in slices
  • 125 g Comté cheese
  • 2 Eggs (size M)
  • 2 Egg yolk (size M)
  • 250 g Whipped cream
  • 7-10 Tbsp white pepper
  • 7-10 Tbsp grated nutmeg
  • 7-10 Tbsp Grease
  • 7-10 Tbsp Flour
  • baking paper
  • 7-10 Tbsp Dried peas

Directions

    Put flour, 1/4 teaspoon of salt and 175 grams of butter in pieces in a bowl. With your hands, grate flour and fat into crumbles. Add three to five tablespoons of ice-cold water and knead quickly to a smooth dough. Cover and chill for one hour. Grease six tartlet cups (11 cm Ø). Roll out the dough thinly (approx. 3 mm) on a floured work surface.

    Cut out circles (13 cm Ø) and line the moulds with them. Chill for another hour. Place six pieces of baking paper in each mould and add dried peas. Bake in the preheated oven (electric cooker: 200 °C/ convection oven 175 °C/ gas: level 3) for 15 minutes. Remove the baking paper with the dried peas. Bake the Tartelettes for five minutes more, take them out. Cut the bacon into pieces one centimetre wide and fry until crispy in a pan without fat, drain on kitchen paper. Grate cheese finely. Whisk eggs, egg yolk, cream, 1/2 teaspoon salt, pepper and nutmeg. Stir in 100 grams of cheese. Spread bacon on the bottoms of the moulds. Pour the cheese icing over the bacon.

    Cut the bacon into pieces one centimetre wide and fry until crispy in a pan without fat, drain on kitchen paper. Grate cheese finely. Whisk eggs, egg yolk, cream, 1/2 teaspoon salt, pepper and nutmeg. Stir in 100 grams of cheese. Spread bacon on the bottoms of the moulds. Pour the cheese icing over the bacon. Sprinkle 25 grams of cheese on top, add 25 grams of butter in flakes. Bake on the middle shelf in a hot oven (electric range 175 °C/ convection oven: 150 °C/ gas: stage 2) for 20 to 25 minutes
