Ingredients

  • 200 g Flour
  • 120 g Sugar
  • 1 package Vanillin sugar
  • 120 g liquid butter or margarine
  • 30 g Butter or margarine
  • 30 g Sugar
  • 1 package Vanillin sugar
  • 1 pinch Salt
  • 7-10 Tbsp Peel and juice of 1 untreated lemon
  • 250 g Low-fat curd
  • 1 egg (size M)
  • 1 TABLESPOON Milk
  • 1 1/2 TABLESPOONS Semolina

Directions

    Mix flour, sugar and vanilla sugar. Add liquid fat and work through with the dough hooks of the hand mixer until crumbles are formed. For the quark filling, mix the fat, sugar, vanillin sugar and salt with the whisks of the hand mixer until foamy. Separate the egg. Add lemon zest and juice, quark, egg yolk, milk and semolina and mix well. Beat the egg white until stiff and fold into the quark mixture. Put half of the crumbles into a greased small springform pan (18 cm Ø) and press them down.

    Put the quark filling on the crumbles and smooth it down. Spread the rest of the crumbles on the quark mixture. Bake in the preheated oven (electric: 200 °C/ gas: level 3) for approx. 45 minutes. Let it cool down a little bit. Remove the cake from the edge of the springform pan with a knife and let it cool down on a cake rack. Makes 6-8 pieces
