Stir cream cheese and cayenne pepper until smooth. Wash and drain the grapes. Spread pumpernickel with cream cheese. Wash the salad, dab dry and pluck into small pieces.
Spread lettuce and ham on the cream cheese. Put the grapes on wooden skewers and put them into the pumpernickel slices. Arrange 3 pumpernickel slices each on plates. Garnish with cayenne pepper and parsley as desired
