Clean and wash spring onions and cut into fine rings. Peel and chop the garlic. Mix with sour cream, salad cream and 2/3 spring onions, season to taste

Arrange hot prawns and sauce. Sprinkle with cayenne pepper and remaining spring onions. Garnish with lemon. Served with: baguette
