Potato with crab & sprout mix

Ingredients

Servings: 4
  • 4 large potatoes (about 300 g each)
  • 7-10 Tbsp Juice of 1 lemon
  • 7-10 Tbsp salt, white pepper, sugar, 4 tablespoons oil
  • 150 g Mixed sprouts (e.g. mung bean, alfalfa, sunflower, radish and radish sprouts)
  • 100 g North Sea crab meat
  • 1/3 (approx. 150 g) Cucumber
  • 1 medium sized tomato
  • 150 g Whole milk yoghurt
  • 2 TABLESPOONS Fresh cream
  • 7-10 Tbsp Salad leaves, untreated
  • 7-10 Tbsp Lemon and dill

Directions

    Wash the potatoes well and cook for about 40 minutes. Mix lemon juice, salt, pepper and some sugar. Beat the oil well into the mixture

    Sort the sprouts, wash and drain. Shrimps rinse and drain. Wash cucumber, peel if necessary. First cut into slices, then into strips. Wash tomato, quarter it and remove seeds if necessary. Finely dice the flesh. Mix everything with the marinade

    Mix yoghurt and crème fraîche, season to taste. Drain the potatoes, cut them crosswise, break open a little and arrange them on top with the sprout mix and dip. Garnish with salad, lemon and dill
