Potato waffles with apple compote

Ingredients

  • 750 g sour apples (e.g. Elstar)
  • 4 TABLESPOONS Sugar
  • 2 TABLESPOONS Lemon juice
  • 5 TABLESPOONS apple juice
  • 1 kg Potatoes (e.g. Belana)
  • 1 Onion
  • 3 Eggs (Gr. M)
  • 1 TEASPOON Salt
  • 3-6 TABLESPOONS Flour
  • 7-10 Tbsp Oil

Directions

    For the compote, peel, quarter, core and chop the apples. Put them in a pot with sugar, lemon and apple juice. Bring to the boil while stirring and simmer for about 10 minutes until the apples are soft, but not yet crumbled.

    For the waffles, peel the potatoes, wash them, grate them finely and let them drain in a sieve. Peel and grate the onion. Mix with potatoes, eggs and salt. Stir in 3 tablespoons of flour. If the dough is too soft, stir in a spoonful of flour.

    Heat a waffle iron and brush with oil. Place 3-4 tbsp. of dough in the middle of each wafer, spread lightly and bake 4 golden yellow wafers one after the other. Serve immediately with apple compote. Maple syrup tastes good with it.
