Potato soup with sausages

Ingredients

Servings: 4
  • 2 medium-sized onions
  • 750 g Potatoes
  • 1 TABLESPOON Oil
  • 1 l Vegetable broth (instant)
  • 750 g Leeks (leek)
  • 3 tablespoons (30 g) Mashed Potatoes-
  • 7-10 Tbsp powder
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 4 Vienna sausage
  • 1/2 bunch Chives
  • 1/2 (approx. 60 g) Cup of sour cream
  • 7-10 Tbsp Sweet peppers

Directions

    Peel onions and cut them into rings. Peel, wash and chop the potatoes. Heat the oil and fry the onion rings in it. Add the potatoes and fry briefly. Deglaze with broth and cook for 10 minutes.

    In the meantime clean, wash and cut the leek into rings. Add to the stock and cook for another 5 minutes. Stir in the puree powder and season to taste with salt and pepper. Cut the sausages into slices and warm them up in the soup.

    Wash the chives and cut into small rolls. Spread the soup on plates. Add some sour cream and sprinkle with chives and paprika.
