Potato pancakes with apple sauce

Ingredients

  • 500 g Apples
  • 2 TABLESPOONS Sugar
  • 5 TABLESPOONS apple juice
  • 4 Cinnamon sticks
  • 1 kg floury potatoes
  • 1 Onion
  • 1 egg (size M)
  • 4 TABLESPOONS Flour
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 50 g clarified butter

Directions

    Peel and quarter the apples and remove the core. Cut the quarter into small pieces. Caramelise the sugar in a pot. Deglaze with apple juice and add apples and cinnamon sticks. Cover and simmer for about 10 minutes (depends on the type of apple).

    Chop apple pieces with a fork. Peel, wash and roughly grate the potatoes. Peel onion and grate finely to the potatoes. Add egg and flour. Season to taste with salt and pepper. Butter lard in portions in e

    Bake approx. 16 buffers one after the other, but put 2 tbsp. of potato mixture per buffer in the pan (a total of 3-4 buffers per pan) and fry for 3-4 minutes on each side. Keep the potato pancakes warm.

    Arrange potato pancakes and applesauce on plates and garnish with cinnamon sticks.
