Potato pancake waffles with apple compote

Ingredients

Servings: 4
  • 1 kg sour apples (e.g. Cox Orange)
  • 200 ml apple juice
  • 2 Cinnamon sticks
  • 4 TABLESPOONS Sugar
  • 1 kg Potatoes
  • 1 Onion
  • 2 Eggs (size M)
  • 3 TABLESPOONS Flour
  • 2 coated Tsp Salt
  • 7-10 Tbsp Grease

Directions

    For the apple compote, peel, quarter, core and cut apples into pieces. Boil up with apple juice, cinnamon and sugar in a pot while stirring. Simmer at medium heat stirring several times for about 20 minutes. Let it cool down

    Peel, wash and finely grate (do not grate!) the potatoes. Drain the potato puree in a sieve, collecting the potato water in a bowl. Peel and grate the onion. Mix with the grated potatoes. Drain the potato water and add the potato flour to the potatoes. Add eggs, flour and salt, mix well

    Grease the waffle iron and bake about 4 waffles one after the other from the dough. Serve still hot with apple compote. Maple syrup tastes good with it
