Ingredients

  • 1 kg waxy potatoes
  • 3 Tomatoes
  • 1 Onion
  • 1 bunch of greens
  • 1-2 TABLESPOONS Oil
  • 300 g Pork sausage
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS Tomato paste
  • 3 TABLESPOONS Butter
  • 2 go. Tbsp. flour
  • 200 g Whipped cream
  • 250 ml Vegetable broth (instant)
  • 7-10 Tbsp Cress

Directions

    Wash the potatoes and cook in boiling water for about 20 minutes. Then rinse with cold water, peel and leave to rest. In the meantime wash, clean, quarter and seed the tomatoes. Cut the flesh into small cubes. Peel and finely dice the onion. Clean the soup greens, possibly peel, wash and cut into small cubes.

    Heat oil in a pan. Fry onion and soup vegetables briefly. Add minced meat, season with salt and pepper. Stir-fry for about 5 minutes until crumbly. Stir in tomato paste and tomato cubes. Deglaze with 100 ml water, boil down for 2 minutes at high heat. Melt butter in the pot. Sweat flour in it. Stir in cream and stock, bring to the boil and simmer for 2-3 minutes. Season to taste with salt and pepper. Cut potatoes into slices.

Serve sprinkled with cress
