Peel, wash and roughly dice the potatoes. Peppers and spring onions clean, wash and cut into pieces. Whisk eggs and milk. Season with salt, pepper and paprika
Heat the oil in a small pan. Fry the potatoes for about 8 minutes until golden brown. Add paprika and spring onions and fry for a few minutes. Add egg milk and let it simmer covered at low heat for about 10 minutes. Serve with herb crème fraîche
