Roughly dice the potatoes. Cut the bell peppers and spring onions into pieces. Whisk eggs and mineral water. Season with salt, pepper and sweet paprika
Heat the oil in a small pan. Fry the potatoes for approx. 8 minutes, turning them until golden brown. Add paprika and spring onions and fry for a few minutes. Add the beaten egg, cover and let it simmer at low heat for about 10 minutes. Serve with herb crème fraîche
